A Great Way to Use Leftover Shredded Carrots

I’m always scared to buy a bag of shredded carrots at the store. They’re great with hummus in wraps and make a perfect weekday lunch. That being said, do I really need an entire bag of them? They never last more than a day or two.
Now, you can too can buy shredded carrots without fear. Use them in your sandwiches and, whatever don’t get used, just make up some of this great indian carrot dessert.
Gajar (Carrot) Halwa
- 2c. shredded carrots
- 3/4c. evaporated skim milk
- 2-3T. sugar or sugar substitute
- 1/2t. cardamom
- 1-2T of light buttery spread
→Melt the buttery spread over low-medium heat.
Add the carrots and fry them until they’re a little lighter (about 5-6 minutes).
Add the evaporated milk and stir well until it’s absorbed by the carrots (about 10 minutes).
Turn the heat down to low, add the sugar (substitute) and cardamom and mix it around for another minute or so.
Top with some almonds or other nuts/dried fruit if desired. Or just enjoy as is!
